2 large yellow onions, thinly sliced (about 4 cups)

1 cup all-purpose flour

1 large egg, lightly beaten

1 cup milk (whole milk recommended)

2 tablespoons melted unsalted butter, plus more for greasing

Instructions

Prepare the Onions: Thinly slice the onions (about 1/8 inch thick). Place them in a large bowl.

Make the Batter: In a second bowl, mix flour, salt, pepper, baking powder, and baking soda.

Add Wet Ingredients: Stir in the beaten egg, milk, and melted butter. Don’t overmix.

Combine Onions and Batter: Fold the sliced onions into the batter until fully coated.

Heat the Oil: Add 1/4 inch of vegetable oil to a skillet and heat over medium.

Fry the Fritters: Drop 1/4 cup portions of batter into the hot oil. Fry 3-4 at a time.

Flip and Cook: Fry 2–3 minutes per side, or until golden brown and crispy.

Drain Excess Oil: Remove and place fritters on a paper towel-lined plate.

Serve Hot: Serve immediately for the best crunch!

– For a spicier version, add a pinch of cayenne or paprika to the batter.
